Rebecca's Post-Swim Muffins

This recipe was given to me by my dietician. I have altered it slightly by adding seeds. I find these muffins are the best midday snack! They fill me up, I get in the carbohydrates I need and they are just scrumptious! Plus.....who doesn’t love a good old muffin everyday.

Ingredients

  • 2 eggs
  • 1 cup brown sugar
  • 60ml canola oil
  • 1 cup oat bran
  • 1½ cups cake flour
  • 2 cups wheat bran
  • 2ml salt
  • 1 Tbs bicarb
  • 1 large grated apple (peeled)
  • 1 cup cranberries or raisins
  • 5ml cinnamon
  • 2 cups low fat milk
  • 5ml vanilla essence
  • ½ cup pumpkin seeds
  • ½ cup flaked almonds
  • ½ cup sunflower seeds

Preparation

  • Beat eggs, sugar and oil in bowl
  • Sift in flour, cinnamon, bicarb and salt. Don't stir until the end.
  • Add oat bran, wheat bran, seeds and apple. Don't stir.
  • Add milk and vanilla essence.
  • Stir everything until just mixed. DON'T OVER MIX.
  • Seal the bowl and put in the fridge overnight.
    Bake in muffin tray (I place cupcake paper holders into the muffin tray) at 180°C for 15 to 20min.
  • I sometimes add 1/2 cup of chocolate chips into my muffins.
